Applesauce-Cranberry Muffins Recipe

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup applesauce
  • 3/4 cup skim milk
  • 3 tablespoons canola oil
  • 1/2 cup cranberries
  • 1 egg
  • 3 tablespoons canola oil
  • 1/2 cup cranberries
  1. Heat oven to 400F (200C). Coat 12 muffin cups with nonstick spray.
  2. Whisk flour, sugar, baking powder, baking soda, and cinnamon in a bowl. In another bowl, whisk applesauce, milk, egg and oil. Stir in cranberries. Add cranberry mixture to dry ingredients and stir just until moistened; divide batter among muffin cups.
  3. Bake until a toothpick inserted into center of a muffin comes out clean, about 20 minutes. Remove muffins from pan and place on a wire rack to cool. Serve warm or cooled.
