Apple sponge pudding with toffee sauce Recipe

  • 1 apple
  • 75g/2¾oz butter
  • 75g/2¾oz sugar
  • 75g/2¾oz self raising flour
  • 25g/1oz butter
  • 25g/1oz brown sugar
  • 1 egg
  • 25ml/1fl oz milk
  • 75g/2¾oz butter
  • 75g/2½oz dark brown sugar
  • 100ml /3½fl oz double cream
  1. Pre-heat the oven to 200C/400F/Gas 6.
  2. Peel and slice the apple into wedges. Melt the butter and sugar in an oven-proof frying pan. Cook until golden. Add the apple wedges.
  3. For the pudding, mix together the flour, butter, sugar, egg and milk to form a smooth paste.
  4. Place the mixture on top of the apples place into an oven proof frying pan and place in the oven and cook for 8-10 minutes.
  5. For the toffee sauce, melt the butter and sugar for four minutes slowly add the cream.
  6. Serve with the apple sponge pudding.
