- 3 cups coarsely chopped fresh tomatoes or cherry tomato halves
- 1/2 cup extra virgin olive oil
- 3 cloves garlic, crushed
- 1/2 teaspoon red pepper flakes, crushed
- 1 pound uncooked angel hair pasta
- 3/4 teaspoon Morton Lite Salt® Mixture, divided
- 1/2 teaspoon freshly ground black pepper
- 1 cup loosely packed fresh basil leaves, chopped
- 2 tablespoons freshly grated Parmesan cheese (optional)
- In large glass bowl, combine tomatoes with oil, garlic, and red pepper flakes. Cover and allow to marinate in a cool spot (not refrigerated) for about 2 hours.
- Cook pasta according to package directions, substituting Morton Lite Salt(R) Mixture for salt. Reserve 1/2 cup cooking liquid, then drain. Toss pasta with pasta liquid and 1/4 teaspoon Morton Lite Salt(R) Mixture. Season the tomato sauce with remaining 1/2 teaspoon Morton Lite Salt(R) Mixture and pepper; stir in basil. Toss tomato sauce with pasta. Sprinkle with cheese, if desired. Serve immediately or at room temperature.
