Almond Flour Pancakes from Almond Breeze® Recipe

  • 1 1/2 cups almond meal
  • 3 eggs
  • 1/2 cup Original Unsweetened Almond Breeze Almondmilk Coconutmilk Blend
  • 2 tablespoons maple syrup or sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  1. In a medium bowl, mix all ingredients.
  2. In a non-stick skillet over medium-low heat, scoop 1/4 cup spoonfuls of batter into pan.
  3. Cook 3 to 4 minutes or until golden brown, then flip and cook an additional 1 to 2 minutes on the other side.
  4. Serve with fresh fruit & maple syrup.
