- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup All-Bran® Original
- 1/4 cup firmly packed brown sugar
- 3/4 cup milk
- 1/4 cup orange juice
- 1 teaspoon grated orange peel
- 1 egg
- 1/4 cup vegetable oil or almond oil
- 1/2 cup toasted chopped almonds
- Stir together flour, baking powder and salt. Set aside.
- In large mixing bowl, combine Kellogg's(R) All-Bran(R) cereal, sugar, milk, orange juice and peel. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Stir in almonds. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.
- Bake at 400 degrees F about 20 minutes or until lightly browned. Serve warm.
